Jam is a jelly-like mass containing whole fruits and berries cooked in sugar syrup, or their own, but cut into pieces. What is the difference between jam and jam? When using pectin-poor fruits, gelling additives are added - juices and fruits rich in pectin, gelatin, agar-agar. There are two ways of making jams.

  • The first way suitable for fruits and berries rich in pectin.
  1. The fruits are pre-cooked for 10-15 minutes so that the pectin of the fruit or berries better show its gelling properties. Fruit broth or part of it is used to prepare sugar syrup. Sometimes the broth is pre-filtered. In some recipes, the fruits are additionally boiled in a small amount of water (for 1 kg of ripe fruits - 50 ml of water, unripe - 100 ml) so that they let the juice out.
  2. Boiled fruits are covered with sugar (if soft, well-ripe fruits or berries are used) or poured with sugar syrup. When making blackcurrant (or gooseberry) jam, the berries are lightly crushed for better soaking with sugar syrup. Cook until cooked, poured hot into hot sterilized jars, rolled up, stored in the cold.
  • Second way used if the fruits are depleted in pectin.
    1. The fruits are preheated with sugar, and then poured with pectin extract or juice with high content pectin substances, or other gelling agents are added.
    2. Cook with jam until tender. Poured into cans, rolled up.

    Features of making jams:

    • Cooking operations must be carried out quickly in order to prevent the destruction of pectin substances.
    • They begin to cook jams over high heat - this is how enzymes that are destructive for pectin are destroyed. Therefore, it is best to cook jams in a bowl with a thick bottom and low walls, which imposes a limit on the number of fruits - no more than 1.5 kg per cooking.
    • It is advisable to add sugar (in recipes that do not use syrup) in small portions so as not to interrupt the cooking process.
    • Check the readiness of the jam by the way it flows from the spoon. The finished jam flows down from a spoon with a thin thread. If in drops, continue cooking. If the cooled jam falls off the spoon in pieces, then it is ready, you can remove it from the stove. The cooled drop of finished jam wrinkles (the surface is not smooth). When rubbed, the cooked jam does not stick to the fingers. If you have a technical thermometer, then the temperature of the finished jam should be 106.5-107 degrees, if it is not sterilized further, and 104-105, if it is necessary to pasteurize.
