In addition, you must collect the following documents:

  • Agreement on the removal of waste with their subsequent disposal;
  • Contract for the disinfection and disinfestation of the premises;
  • The list of products sold, agreed with the regulatory authorities;
  • Pizza Production Control Program;
  • Certificate of registration of entrepreneurial activity.

Planning

Let's make an approximate business plan for how to open a pizzeria from scratch:
  • Registration of documents;
  • Selection and rental of premises;
  • Recruitment;
  • Purchase of equipment;
  • Calculation of financial costs;
  • Advertising;
  • Profit calculation.

Before starting such a business, be sure to research the market to assess the level of competition in your city or town, and also analyze the profitability of the idea. Calculate how much it costs to open a small pizzeria, compare the level of competition and demand for such products, and then draw conclusions about the prospects of this business.

Criteria for choosing a location and arrangement of the premises

If you want to open a small pizzeria, any empty space will do. It is desirable that it be located in the city center, for example, in a large shopping center. Another option is a densely populated sleeping area. The premises can be rented or purchased. Its area must be at least 120 square meters. meters. For 40 sq. meters, a kitchen should be equipped, and the rest of the area should be equipped as a hall for visitors.

If you want to provide pizza delivery services, you can ask how to open a pizzeria at home. In this case, your institution can be located anywhere in the city. In addition, you can significantly save on renting or buying a room.

Equipment

The choice of equipment depends on the volume of production. If you are planning to open a small production, at first you can do all the processes manually. In this case, you still have to purchase refrigerators and freezers for food storage. In addition, you need to buy glass or stainless containers.

If you want to save on the purchase of equipment, you can order the pizza base in the required quantity at the nearest bakery. Pizza is usually baked in deck or conveyor ovens. In principle, this is all that is needed to open a pizzeria from scratch.

For large-scale production of ready-made or frozen pizza, you will need:

  • flour sifter;
  • dough mixer;
  • Vegetable cutter;
  • Plate;
  • Bake;
  • Refrigeration equipment;
  • Thermal bags for pizza delivery.

In addition, you also need to buy a coffee machine, equipment for making cocktails, a refrigerated display case for drinks, chairs and tables.

As you can see, it is rather difficult to answer unequivocally the question of how much money is needed to open a pizzeria, since equipment prices can range from 4.5 to 150 thousand dollars.

Staff

Everyone knows that in the service sector, the most important thing is personnel. The success of such a business is 40% dependent on the level of service, so it is necessary to pay special attention to the selection of personnel.

First of all, you need to find a good cook. This should be an experienced highly qualified specialist who is able to bring high income to your institution. It is desirable that it be a foreigner who was born and raised in Italy, the birthplace of pizza. If financial possibilities do not allow you to hire such a professional, be sure to find an experienced chef. Another option is to hire a specialist who has trained in Italy and is ready to further improve his skills.

In addition to the cook, you need to hire an administrator, waiters, cashiers and a chief accountant. If you are planning to open a delivery pizzeria, you also need to find couriers, preferably with their own transport, and a person who will take orders by phone.

Menu

Thinking about how to open a pizzeria in a small town? Such an institution is no different from pizzerias operating in large metropolitan areas. The main component in the menu of any pizzeria, of course, will be pizza.

This dish can be of two types, depending on the cooking technique:

  • American pizza, consisting of a thick flatbread and rich toppings - 650-950 g;
  • Italian pizza on a flatbread, no more than 1.5 cm thick - 350–500 g.

If you are planning to open a takeaway pizzeria, it is better to choose the first option, as Italian pizza gets cold very quickly.

You have probably heard about such popular varieties of pizza as:

  • Margarita;
  • Pepperoni;
  • 4 seasons and more.

They are very popular, so they must be present on the menu. Of course, it will not work to please all customers, but you need to try.

It is also advisable to include snacks, desserts and hot dishes in the menu of your establishment. Also, do not forget to add soft drinks, tea and coffee to the assortment. Now you know what you need to open a pizzeria buffet. Stock up on resources and get to work. If you do everything right, such a business will bring excellent profits.

Experienced entrepreneurs are often interested in whether it is profitable to open a pizzeria based on a cafe? Recently, such institutions have become very popular. In addition, they bring good profits, as they cover a wide range of activities. If you plan to make such a mix, think carefully and calculate everything beforehand. In order to avoid mistakes when purchasing equipment, it is advisable to consult with experienced specialists.

Financial investments

Aspiring entrepreneurs often ask the question, how much money do you need to open a pizzeria? The budget of an institution for 30 seats, in addition to the cost of ingredients, includes the following expenses:

  1. Premises rent - about 5 thousand dollars. The cost of rent will depend on the advantageous location, area and renovation of the premises;
  2. Business registration and paperwork - approximately $ 900;
  3. Purchase of equipment - 12 thousand dollars;
  4. Products - 3.6 thousand dollars;
  5. Staff salaries - 2.5 thousand dollars;
  6. Advertising - 2 thousand dollars;
  7. Repair and interior decoration - 2 thousand dollars.

If you have made a decision, I want to open a pizzeria, you need to have on hand a starting capital of about 30 thousand dollars. With proper management, all initial investments will pay off in just 1–1.5 years. After that, you will reach a net stable income.

Profit and profitability

We figured out how much it costs to open a pizzeria. Now let's try to calculate the future profit. Pizza usually has a 200% markup. For hot drinks and sweets 300–400%. With an average check of 400-500 rubles, the establishment will bring 4-5 thousand rubles of income daily. At first, if the pizzeria is visited by 10 people a day, you can get 150 thousand rubles. Over time, when more customers appear, profits will grow by 2-3 times.

The minimum profitability of this business is approximately 20-25%. If you are not satisfied with this indicator, open. In this case, you will be able to reach a wider audience and increase the level of profitability of the institution up to 50-60%.

conclusions

The main rule for the success of any business is a responsible attitude to your business and the competent organization of all processes. To make your pizzeria more popular than competitors, you need to hire qualified staff, create a unique atmosphere and, of course, cook delicious food. In this case, your business will prosper and bring in a solid income.

Starting a pizza delivery business is easy and hard at the same time. Simple - because such large investments are not required, as for more serious enterprises. Difficult - because you have to go through the chain of command, work hard to earn a name and be patient until the business pays off.

If you succeed, you will get a highly profitable business, you can open new outlets or even full-fledged restaurants. It all depends on your patience, desire and determination.

Features and difficulties of such a business

Let's start the topic: "How to open pizza delivery at home", with the features of the business and the difficulties arising from them. The first and most obvious is competitors. They are all establishments where they prepare and deliver pizza: specialized pizzerias, restaurants and just delivery companies. You probably saw how all the entrances are pasted over with advertisements with the menu of such firms. As a rule, the number of competitors in one area is not very large, which makes the task easier. But their main advantage is the speed of delivery, a well-known name and reputation.

Customers are reluctant to change their habits and prefer to order in one place - where they cook delicious pizza and deliver it quickly. Gotta make an effort to convince them to buy something from you. To do this, you need to give more advertising, literally "an eyesore" so that the client decides to order something from you.

Next you need to earn reputation. Your pizza should arrive to the client as quickly as possible, always be tasty and of high quality. If you cook poorly or delay delivery, the person will no longer order from you and dissuade his friends from doing so. Therefore, carefully monitor the quality of the ingredients and the technology of making pizza, saving on this is a bad option.

The next one is organizational difficulties. First you need to find a place. Please note that it is unlikely that such a business can be organized in your own apartment. But even in this case, you will have to go through many instances, at least, this is obtaining a trade patent, permission from the fire inspectorate and SES. Experienced entrepreneurs recommend going to these organizations with a project for the premises before the lease is signed. You can immediately eliminate the shortcomings, so that later you do not have to redo anything.

Then - the staff, namely - cooks. It is unlikely that you will be able to find someone who will cook it using all Italian technologies for pizza delivery. This is taught in specialized institutions or immediately in restaurants. One consolation is that many say that pizza in Russia is tastier than in Italy. But in any case, you need to find an intelligent person who will make sure that the pizza is tasty, and its taste remains unchanged over time.

This is not easy, because it is not always possible to purchase raw materials from one supplier. And it is the chef who will determine whether he can recreate the same taste using different flours, cheese, tomato paste, etc. And also the tendency of the culinary profession is to change jobs every 2-3 years, as they get bored with the former.

Menu. Need to add at least drinks and salads to it. If you look at the menu of other similar establishments, you will see that they are not limited to pizza. The most popular is the combination of pizza and sushi.

Fast delivery. Take care of logistics issues by purchasing several inexpensive cars or hiring drivers with your own cars. If you work in a residential area, a suburb or a small town, the bulk of the delivery will be carried out by cars or mopeds. In the center of the metropolis, it is better to deliver pizza by public transport due to traffic jams.

About how much time the delivery should take - see the comment of the expert.

Premises and equipment

Enough 30 sq.m., where you can place all the equipment. May need cosmetic repairs. The premises must comply with fire safety and SES standards, which you will first visit before the start of the lease period, and then see the representatives of these organizations again after everything is equipped.

Since you only need a bakery, a small production hall is enough. The premises for it can be rented in canteens, cafes, residential buildings, put up a separate tent for the sale of pizza - wherever it is possible to put the equipment and start cooking. It is important that courier cars can easily drive up to your workshop and take away the goods from there.

We are talking about a pizza delivery business only, we are not discussing the possibility of organizing a full-fledged pizzeria yet. But it is quite possible to open it when you settle in the market and receive a stable income. But as an option, you can put a few tables in the room, if the area allows, or provide the opportunity to take freshly baked pizza to go.
  1. Pizza oven hearth or conveyor. Deck oven cheaper, pizza is placed on a stone floor and baked at a temperature of 400-500 degrees Celsius. Conveyor models are more expensive, but they are better suited for the preparation of the same type of product. Both types of ovens are gas and electric. There are also wood-burning ovens - a classic option for an Italian pizzeria. But pizza delivery companies are encouraged to use conveyor models - they are more productive and easier to operate.
  2. Pizza table. Here the pizza will be assembled and prepared for delivery to the oven. The table must have gastronorm containers with a cooling effect for storing ingredients.
  3. Refrigerator and freezer. This is where the rest of the ingredients will be stored.
  4. Ventilation equipment.
  5. Dough sheeter.
  6. Forms for pizza.
  7. Kitchen tools.
  8. Gravy boats.
  9. Package.
  10. Pizza bags.

Personnel and procurement of raw materials

What staff is needed:

  1. Cooks. Optimal - 2 pizza chefs who can work together or in shifts.
  2. Purchaser of equipment and raw materials. You can act as it yourself.
  3. Couriers - from 4 people.
  4. call center operator. You can also do this on your own at the first stage.

Activities from 2, 3, 4, and sometimes 1 point you can do yourself. Mistakes made by many new entrepreneurs trying to do everything yourself. Calculate exactly what kind of work and for how long you can do it yourself, what you can entrust to employees and to whom, otherwise you may not be able to do anything. The best option is to purchase raw materials yourself and answer part of the calls, and delegate the rest of the duties to employees.

First, let's talk about what raw materials you need. Ideally, pizza should be made with hot dough and quality products. But there is an opportunity to save money by buying several pizza blanks and several options for fillings sold at wholesale depots.

Pizza will cook very quickly, the cost will be minimal, but the quality may suffer. Therefore, if you go this way, first personally try each cooked pizza and decide if you would buy such a product again.

If you decide to buy the ingredients separately, they are sold in wholesale stores such as METRO or at specialized bases that supply raw materials for pizzerias. You can find a permanent supplier in Russia or abroad and buy all the ingredients from him. It can be said unequivocally that raw materials are not something that can be saved on.

Economic calculations

Minimum costs:

  1. Room rental - from 15 thousand rubles per month.
  2. Equipment - 170-200 thousand rubles.
  3. Raw materials - 100-200 thousand rubles.
  4. Repair (if necessary) - 50-100 thousand rubles.
  5. Salary for employees - 150-200 thousand rubles per month.
  6. Registration of an enterprise - from 15 thousand rubles.
  7. Advertising - from 30 thousand rubles.
  8. Packaging for pizza - from 10 rubles. for a box.
  9. Printing booklets with menus - 5-10 thousand rubles.
  10. Utilities - 20-30 thousand rubles.

This is an approximate minimum cost. It can be more or less and varies depending on the region.

The average profitability of such an enterprise is 35-40%. The payback period is from 20 to 30 months. The cost of 1 pizza is 50-120 rubles. Margin - 200-300%. The average price of a pizza is 250 rubles. The average number of items is 20 types of pizza on the menu. Approximately 50 orders can be delivered per day. Let's say 1 order is, on average, 2 pizzas. We think so, because 1 person can order 1 pizza, at the same time a large company will order 3 pizzas. So it turns out 2 pizzas to order. Please note that these are very rough estimates.

As a result, the average cost of a pizza is 85 rubles. Let's say you sell 100 pizzas a day. We calculate the gross income per month:

(250 x100 - 85 x100) x 30 = 495,000.

After deducting expenses and taxes, the net profit will be 70-100 thousand rubles per month. This is a rough and very approximate calculation - income can be more or less. You will surely have other types of food and drinks that will increase your profits. The optimal ratio between the cost of production and the price: 1:5. some companies use a ratio of 1:7.

Do not seek to set a price higher than that of competitors, otherwise you risk being left with nothing. Focus on the average market price, too cheap pizza should not be sold either - this causes suspicion. In addition, you will have to save on raw materials, but this is not worth doing, as mentioned above.

Advertising

Come up with a catchy name, a bright logo and patent them. The client should see them as often as possible: on flyers, on cars, on the Internet, on billboards, in print, etc.

Create your site. Place on it all the information about the product, its ingredients, some interesting articles, the history of your company and everything that may be of interest to the client. Don't forget the most important thing - the "order" button. The client should be able to instantly buy pizza directly on the site, order a call back or call the specified phone number on their own.

Design mobile app. Its purpose is to quickly buy pizza and notify you about the news and special offers of your company.

Paste menu booklets in the hallways. They will be constantly plucked, but someone will definitely want to order a pizza, since there is no need to look for delivery companies on the Internet - the menu has already been brought directly to his apartment.

Develop a discount system. For example, let the subscribers of a group on a social network receive a 5% discount, or a 10% discount for a repeat order within 2 weeks, etc.

Run word of mouth radio. Many companies rate it as the best way to advertise. Let one of your friends, in a conversation with their friends, tell what delicious pizza they tried and order it so that people are convinced of this. Your task is to cook really tasty pizza and keep the brand, otherwise you will instantly lose confidence.

A pizza delivery business is pretty easy to set up. It has its own characteristics and difficulties. In short, to overcome them - you need patience and ingenuity. Then you will get a profitable and highly profitable enterprise with unlimited opportunities for expansion, growth and opening of new branches.

Many pizza delivery companies started out as small bakeries where the owner delivered the pizza himself. And now these are large enterprises, known throughout the country or even abroad.

Although there are more than one pizzeria open in every city, the demand for this product attracts new businessmen. How to open your pizzeria from scratch? An example of a business plan with calculations will show the main advantages of the project and allow you to competently build a business.

Define the format

The cafe format offers visitors, in addition to several varieties of pizza, snacks, salads, sweets and drinks. Judging by the reviews, this is the most common and popular type of pizzeria, requiring fairly large investments.

Opening an Italian restaurant is difficult, expensive and time consuming. Such an institution has special requirements for equipment, staff, assortment. To compete in this market segment, it is necessary to understand the intricacies of the restaurant business very well and organize a truly original and high-class enterprise.

It is not difficult to open a pizzeria in a kiosk. A kitchen with a window for issuing products will not require large financial investments. Even a converted car is suitable for this. Nearby, you can put several tables for visitors, organize home delivery and take orders online.

Pizza delivery as a separate area requires a carefully thought-out advertising and marketing policy. Usually people order a product that has already been tested at home. Therefore, to make a popular correspondence product is not an easy task. But this is the cheapest business venture with minimal labor and time costs.

Often, entrepreneurs include the delivery and packaging of takeaway products in the list of services of a stationary pizzeria.

Step by Step Pizzeria Business Plan

When the issue with the format is resolved, it is necessary to draw up a business plan.

  1. Marketing research of the market.
  2. Company registration and obtaining permits.
  3. Selection and decoration of the premises.
  4. Purchase of equipment for a pizzeria.
  5. Range development.
  6. Hiring staff.
  7. Launch of an advertising campaign.
  8. Calculations of how much it costs to open a pizzeria from scratch.

This step-by-step instruction allows you not to miss anything important when planning and launching a project of any complexity.

It is also necessary to bring appliances and furniture to a cafe-type pizzeria, but they are not subject to such stringent requirements as in a restaurant. A sample list of equipment for a room designed for 20-25 clients:

  • dough kneading machine;
  • dough rolling machine;
  • bake;
  • hood;
  • refrigerator with freezer;
  • showcase with cooling mode;
  • a table for collecting pizza;
  • kitchen scales;
  • a set of kitchen utensils - knives, forks, spoons, cups, plates, glasses, etc.;
  • coffee maker;
  • furniture in the hall - tables, chairs, clothes hangers;
  • rack for distribution of finished products;
  • office equipment;
  • software;
  • music Center;
  • Internet connection and Wi-Fi;
  • TV set.

In the compartments for household needs, you will need to install racks and organize a place to store inventory and products, equip a change house for the needs of staff, and equip a bathroom with plumbing.

For take-out and pizza delivery, you need to purchase special containers and plastic containers for packing other dishes.

Delivery can be carried out by the transport of the pizzeria or by agreement with the courier service. For your own needs, you will need to purchase a car, motorcycle or scooter, and hire a courier driver.

Range

There are a huge number of types of pizza, but the most important thing in it is the dough. The Italian version is prepared on a thin base, with a total weight of no more than half a kilogram. American pizza can even be a kilogram due to the thick flatbread. The most popular pizzas all over the world are Margherita, 4 Seasons, Pepperoni.

Along with ready-made options, visitors can be offered to order pizza from individual components to their own taste. To do this, the menu should include as many different ingredients as possible in order to satisfy the most demanding customers. Where possible, products should be locally produced. It will be cheaper and will allow buying fresh and high-quality food.

In addition to pizza, the assortment of cafes should include salads, snacks, desserts, soft and hot drinks, and low-alcohol products. Small kiosks and delivery services mostly sell only pizza, although you can diversify the menu and expand the circle of customers with rolls, french fries and sweet pastries.

Some aspiring entrepreneurs run into trouble due to a failed pizza dough recipe. Therefore, even before opening a pizzeria, you need to make a trial batch and make sure the taste of the product.

Staff

An important component of the success of the institution are employees. The attendance and profitability of the project depends on their competence.

Depending on the format of the pizzeria in the state, the following are required:

  1. Chef.
  2. Cook.
  3. Technologist.
  4. Administrator.
  5. Waiters.
  6. Dishwasher.
  7. Courier.
  8. Accountant.
  9. Cleaner.

The restaurant should have the most complete and qualified staff. It is good if the head chef previously worked or was trained in Italy, and the waiters have at least 5 years of experience in large catering enterprises. Accounting in a restaurant is complex, so it is better to hire a full-time accountant.

In a cafe, you can accept service personnel without work experience, but the cook and technologist must be highly qualified. Even inexperienced waiters must be polite, courteous, attentive, and have a good memory.

Accounting can be kept by an incoming accountant or a specialized company. To deliver pizza, you need a courier with a driving license, and if you do not plan to buy a car in a cafe, then with your own transport.

The small format of a pizzeria involves a minimum staff - a pizza maker, a courier and an administrator. The owner of the enterprise can accept and issue orders.

All staff of the pizzeria, according to sanitary standards, must have medical books.

The question of how to open a pizzeria from scratch without spending on advertising is not worth it at all. Only by deploying large-scale events, you can attract customers to your pizzeria of any type.

  • a noisy opening ceremony of a pizzeria with the involvement of celebrities and the press;
  • ad blocks on television, radio and newspapers;
  • information on billboards and city lights;
  • original design of the facade and signs of the institution.

Near the cafe, you can put up handing out flyers of an advertising agent dressed as a cartoon character or a piece of pizza. For a delivery service, it is enough to organize targeted mailing of business cards and post flyers in crowded places, in elevators of houses, at porches.

All formats must be submitted online:

  1. Create groups in social networks and carry out promotions there.
  2. Start a pizzeria website with the ability to order delivery online, engage in SEO promotion.
  3. Pay for banner ads.

The more advertising methods will be used, the greater will be the capture of the target audience and the attendance of the pizzeria in the first time after opening. In the future, with the high quality of products and services, positive customer reviews will work on the reputation of the institution.

Economic calculations

The amount of investment, monthly expenses and income of a pizzeria depends on the type of establishment. Opening a restaurant will cost at least 2.5 million rubles, and a pizza delivery service - about a million rubles.

For a cafe with 30 customers, the initial costs consist of:

expenditures Amount, rub.
1 Room rental (for 2 months) 300000
2 Repair work and decoration of a pizzeria 220000
3 Legal registration 30000
4 Equipment and inventory 750000
5 Purchase of raw materials and products 200000
6 Advertising 100000
7 other expenses 50000
Total 1650000

If the premises for a pizzeria are not rented, but acquired in ownership, then the amount of investment will increase several times. At the same time, the risks associated with the lessor disappear, and fixed costs are reduced by the amount of rental payments.

The markup for the main dish is about 200%, for other assortment - 300-400%. At the very beginning of the establishment, there will be few visitors. Based on 10 people per day and an average order value of 500 rubles. monthly revenue is 150,000 rubles. To reach the industry average payback of 1.5-2 years, a pizzeria needs to attract 50 customers a day.

Profitability, according to experts, ranges from 30% to 60%. To reduce the cost of production allows the conclusion of contracts with suppliers of equipment and products on favorable terms.

Any format of a pizzeria will be in demand among visitors with a competent business organization, qualified staff and delicious food.

The production plan includes calculations for the purchase of products, the time of preparation of a certain amount of products. The duties of the staff and the organization of the work of the entire enterprise are also indicated here.

Then you need to correctly calculate the purchase of fresh products for the filling. Otherwise, this perishable product may become unusable.

In the course of work, it will already be approximately known how many products are needed on average per work shift.

The wrong marketing strategy may also not bring new customers, but scare them away.

Separately there is a question with suppliers of products. At first, all the necessary products can simply be purchased in small quantities in supermarkets or on the market.

As a rule, novice businessmen take loans from banks to open a business.

More detailed information should be obtained from professional auditors or other specialists.

We buy a ready-made pizzeria

To immediately get down to business, sometimes it is enough to purchase a ready-made pizzeria. In this case, the initial costs can be quite high, but still significantly lower than the purchase of new equipment and rental of premises.

The finished pizzeria already has a regular clientele and a promoted menu. But, as they say, a new broom sweeps in a new way. The organization of work, the distribution of responsibilities for the marketing line, work with suppliers will have to be started anew.

Pros and cons of a ready-made business

By purchasing a ready-made business, along with it, its advantages and problems are acquired. The advantages are a fully formed production process and the presence of a certain customer base. The downsides may be the hidden debts of the enterprise, the need to recruit most of the new staff and re-roll the marketing line.

Pros and cons of a franchise

The pizza franchise itself is a fairly profitable idea, just like the idea of any fast food business. The disadvantages include the inability to make a forecast for daily demand. This makes it necessary to purchase a large amount of fresh food in very small batches. There is also a lot of competition, so it is necessary to organize work in several areas - a fast food hall, a takeaway pizza delivery window and pizza delivery on orders.

Popular franchises:

  • "Dodo Pizza"
  • "Papa Johns"
  • "Domino's"
  • "Pizza Pomodoro"

The amount of profit and the success of the pizzeria depends on the manager's ability to organize the production process and services. It is the service that can influence the influx of visitors.

Popular questions

Small pizzeria or big?

Depending on the availability of potential buyers, the volume of pizza produced can be calculated. In most cases, it is better to open a mini-pizzeria and then develop it by renting fast food outlets and expanding the delivery area.

What is the profitability of a pizzeria?

The return on investment in a pizzeria, with a successful organization of the business, can be about a year. Of great importance is a properly drawn up business plan, which already includes the percentage of expected profitability, taking into account all expenses and taxes.

Should I start shipping right away?

It’s not worth it, it’s better to first focus on establishing basic production processes. Delivery brings profit to an already promoted enterprise, since this is not the main source of income for a pizzeria, but a type of service provided.

1. Decide on a concept

Marcel follows the principles he learned at McDonald's - the principles of lean manufacturing. Its essence is this: concentration on one product from simple ingredients. This allows you to save on everything: equipment, employee training and supplies. The smaller the menu and the simpler the ingredients, the greater the savings.

Marseille went even further: he decided to open a point where only pizza is sold, which can only be ordered by courier. So he wanted to make lean not only production, but also implementation. Less sales channels, more savings.

This decision made it possible to reduce opening costs: the first Bizon Pizza outlet was opened for 4,300,000 ₽.

All expenses:

  • 2,000,000 ₽ - equipment: a new conveyor oven costs 1,000,000 ₽, we also bought a dough mixer and an industrial refrigerator 15 m2;
  • 1,500,000 ₽ - renovation of the premises, taking into account new ventilation;
  • 300,000 ₽ - the first purchase of products and packaging;
  • 500 000 ₽ - marketing: leaflets, promoters.

2. Choose a city to start

Marcel and his partner Andrei Mamon are former top managers of a well-known pizzeria chain. They advise opening fast food in the regions - there is a huge competition in the capital, therefore, without experience and millions of marketing budgets, it is easy to burn out. The partners chose the city of Dolgoprudny. It is located in the Moscow region, from which you can deliver pizza to a part of Khimki and part of northern Moscow. Other pizzerias were also opened in small towns: Lobnya, Zheleznodorozhny, Belgorod.

Marseille recommends that aspiring entrepreneurs pay attention to the northern cities where oil and gas are produced. There are not such strong competitors as in Moscow or St. Petersburg, and the population has money. A good city for opening a new fast food is a millionaire in the regions.

3. Find a location

You can look for a room on Avito, but it's better to walk and look for rental signs. According to Marcel's experience, not all owners in the regions use the Internet, most work offline. To find premises for the first Bizon Pizza, Marseille moved to Dolgoprudny.

A good location is no guarantee of success: Marseille changed three premises for good reasons.

The first room was in the basement, but the sewerage broke through there and the contract had to be terminated. Do not rent basements - this may end in a flood.

Difficulties arose in the second room when we signed contracts with the owner. He did not answer questions and tried to sign the contract as soon as possible. This became an alarming signal - if the owner does not want to cooperate already at the stage of signing the contract, it can only get worse in the future. So I had to abandon the lease and look further.

The third room was on the second floor of an office building. There were enough parking spaces and the possibility of converting the office into a food premise. Marcel stopped at this option.

While looking, came across a lot of rooms in residential buildings. They are not suitable for public catering - there may be problems with residents and, most likely, there will not be enough capacity. A pizzeria needs 30-50 kW of electricity per hour, and in an ordinary house - up to 10 kW per hour.

4. Make repairs

Neutral equipment - all furniture in the kitchen: racks, shelves, sinks.

You can open a pizzeria only in the food room. This means that water, sewerage and ventilation are provided, there is an inflow of air from the street and an extractor hood is installed. When the premises for Bizon Pizza were being renovated, the electrics were completely replaced and sockets for equipment were added, and the ventilation was carried out from scratch. The walls and floor of the hot and cold shops were tiled. They put in new equipment so that it did not disappoint. Neutral equipment bought second-hand. Installed a fire alarm and fire extinguisher. At the end of the repair, Rospotrebnadzor and the fire service were notified of the opening of a new point.

5. Hire staff

Pizzeria staff can be found on Avito, rabota.ru and zarplata.ru. Marcel found the first employees for the new pizzeria in two weeks - two drivers and three all-round chefs. Now five drivers and five cooks work at the point, one of them is a senior manager.

Marseille's system suggests that generalist chefs do more than just cook. In addition, they clean and communicate with couriers. The senior cook also performs the work of a manager: he helps to control the rest of the employees. As a result, five people cope with everything.

6. Create a contact center

A contact center is an optional step for opening a pizzeria. Marcel created it to develop the network. Some large companies do not have a contact center, and cooks take calls at pizzerias. This can negatively affect the service: the employee prioritizes making pizza over communicating with the client, and may miss a call in the steam. Such moments affect the profit of the business, therefore, telephone operators take calls at Bizon Pizza. Also, the phone number on 8800 is more trustworthy, this is important for a new company.

Marcel works with a ready-made contact center. It employs several employees who are paid by the hour. The following expenses are received monthly:

  • 12,000 ₽ fee for the number and telephony (virtual PBX).
  • 25,000 ₽ - salary of one employee. Marseille has two telephone operators serving all four Bizon Pizza outlets.

7. Launch the site

For a delivery-only business, a website is an important sales channel. It should be easy to use and help the staff. Marseille's website is integrated with the kitchen: the order automatically goes to the chefs. This reduces the time for cooking, and the customer receives pizza faster.

The development of the site "Bizon Pizza" was carried out by Marseille's partner Andrey Mamon. He specializes in the development of IT products, so the site was created without a budget. If you order a similar site from contractors, the easiest option starts from 100,000 ₽.

8. Find suppliers

Before looking for suppliers, take a look at your financial model and check how much you can afford to spend on consumables. This will set the upper bar for prices. When you understand the cost of pizza, look for a supplier with suitable prices. Suppliers can be found on the Internet. Take product samples from favorites and conclude an agreement with the one who tastes better.

9. Find clients

Offline marketing works effectively in the regions - hire aggressive promoters and print flyers. To find the first customers for the pizzeria, Marcel printed 100,000 flyers and hired five promoters. The design of flyers was changed several times to find the most effective one.

Of the two flyers, the beige one (on the right) works better - customers use it more often when ordering. Marseille suggests that red (left) is information-heavy, while beige is concise and clear.

In social networks, "Bizon Pizza" is represented only by Vkontakte. Followers respond well to mailing lists and promotional posts, Marcel says, but flyers work much better. In general, they spend about 150,000 rubles per month on marketing.

If you want to enter the fast food market, consider the experience of Marseille: you can go to the regions; run a small kitchen; to make a mono-product from simple ingredients; earn only on delivery. Read about the nuances of such a business in the following article: Marcel will tell you why working with a single product and one sales channel is not as easy as it seemed.
