How to cook green asparagus with salmon in the oven

The dish with green asparagus and red fish looks very sophisticated, and baked quite simply. An excellent appetizer for receiving guests.

  • 300 g salmon fillet;
  • 150 g fresh asparagus;
  • 200 g of sweet potatoes;
  • 100 ml 33% cream;
  • 55 ml olive oil;

  • 0.5 kg of green asparagus;

  • 4-5 eggs;

  1. Peel the shoots, cut them across into pieces of three centimeters and blanch in salted water for 5 minutes, but no more, so that the vegetable does not lose its fresh, herbaceous taste;
  2. Throw the prepared stems in a colander, when the water drains, put them in a dish treated with oil;
  3. Beat eggs with salt and milk with a whisk, pour the prepared stems with this mixture;
  4. Send the dish into the oven preheated to 150 for 15 minutes, until the eggs are browned. It should not be hard, but most likely resemble jelly in consistency.

To indulge in the tastiest asparagus, consider the following:

  1. When choosing a vegetable for cooking, give preference to stems, the length of which does not exceed 16 cm;
  2. Try to break the shoot, where it will break, just the same level with the coarse part that you need to cut off.
  3. The potato peeler is ideal for peeling the stems;
  4. Green asparagus is cleaned from the middle of the shoot down, but white is cleaned exclusively at the top;
  5. Before cooking, the vegetable is often blanched: sent to salted boiling water for 5 minutes;

We clean and wash the asparagus. I have white asparagus today. We carefully peel its stems, thinly removing the peel. Green is cleaned to the upper, most delicate shoots. Cut off the rough ends by about two centimeters.

We put the oven at 200 - 220 degrees. Mix olive oil with melted butter, add cooked lemon juice. Stir gently.

We lay out our prepared asparagus on foil or paper. Gently pour it on all sides with a prepared mixture of oils and lemon juice and put it in a preheated oven for fifteen to twenty minutes.

Finally, you can sprinkle the asparagus with Parmesan cheese or any other cheese. Salt and pepper to taste.
