  2. Add sugar, zest, salt to the liquid mass and beat in 2 eggs and 2 yolks, flour sifted through a sieve, melted butter and knead into a homogeneous dough that will not stick to your fingers.
  3. Transfer it to a large bowl, cover, and place in a warm place for an hour.
  4. Pour milk over poppy seeds. Bring to a boil over low heat and set aside to swell. You can use a meat grinder: the filling will become softer.
  5. Mix poppy seeds with sugar, honey, raisins, nuts, butter, egg whites.
  6. Knead the dough again, let it rise, then put it on the table sprinkled with flour. Roll out the layer, spread with filling and roll into a long roll.
  7. Leave on the baking sheet to proof for half an hour. Preheat the oven.
  8. Brush with whipped chicken white. Bake for 20-25 minutes. You can eat it warm or cold.

Rolls with poppy seeds - cooking secrets

Sometimes you want to vary the appearance of a dish. Small buns or rolls are just such a case. The secrets for making poppy seed rolls are not radically different from those we use when baking large pies:

  • The dough must be rolled out, cut into strips, then into 10 by 10 cm squares and made into mini rolls.
  • It is better to boil poppy seeds in advance and then pass them through a meat grinder, but it is easier to grind them dry in a coffee grinder.
  • For the filling, mix whatever you want: butter, honey, sugar, nuts.
  • The filling should maintain a viscous consistency and easily come away from the walls of the container (pan).

  1. First prepare the filling. Mix poppy seeds with sugar and milk. Cook over low heat for 10 minutes. Remove from heat. Let it brew for 30 minutes. Strain. Add honey and washed raisins.
  2. Separate the yolks from the whites. Grind the yolks with sugar until a creamy white mass forms. Beat the whites into a strong foam with a pinch of salt. Mix flour with starch and vanilla sugar. Mix the protein foam with the yolks, gradually add flour, stirring with a whisk.
  3. Line a baking tray with baking paper. Spread the dough evenly. Bake for 10-12 minutes in an oven heated to 200°C. Place the finished biscuit on a damp towel. Roll up with a towel and cool while folded.
  4. Unwrap the cooled sponge cake, remove the towel, brush the cake with poppy seed filling and roll again. Sprinkle with powdered sugar.
  5. Advice: Before adding filling to the crust, cut narrow strips of dough from the edges. The rolled roll will look more beautiful.

A worthy alternative to yeast dough is cottage cheese roll with poppy seeds. Adding cottage cheese makes the dough soft, juicy and airy. In addition, curd dough goes well with poppy seed filling.

  • cottage cheese 150 g.
  • flour 300 g.
  • sugar 50 g.
  • milk 75 ml.
  • vegetable oil 75 ml.
  • baking powder 2 teaspoons
  • salt a pinch

For filling:

  • poppy 500 g.
  • milk 250 ml.
  • sugar 150 g.
  • butter 100 g.

Cooking method:

  1. Fill the poppy seed with water, rinse, and carefully drain the water. Pour milk over the poppy seeds and cook, stirring, until the milk is completely absorbed. Finally add sugar and butter.
  2. Mix flour with salt and baking powder. Sift into a bowl. Add milk, vegetable oil, cottage cheese and sugar. Knead the dough. It will turn out sticky. You can use a mixer for this.
  3. Place the dough on a floured table. Roll out into a layer. Spread the poppy seed filling evenly. Roll up. Place the product on a baking sheet lined with oiled baking paper. Brush the top with milk or egg yolk. Bake in an oven preheated to 180°C for 45-50 minutes.

A puff pastry roll is prepared quickly and without hassle. If you have a package of ready-made puff pastry in the freezer, unexpected guests will not be taken by surprise. It is better to choose puff pastry for poppy seed roll. The roll turns out soft and juicy.

  • ready-made puff pastry 1 kg.
  • poppy seed 3 cups
  • honey 1 glass
  • egg 1 pc.
  • vegetable oil 1-2 tbsp. spoons

Cooking method:

  1. Remove the puff pastry and defrost.
  2. Rinse poppy seeds in hot water. Fill with fresh cold water and bring to a boil. Place the poppy seeds in a sieve and let cool. Pass the cooled poppy seeds through a meat grinder twice. Add honey.
  3. Roll out the dough into a thin layer. Place the filling. Roll it into a roll. Grease the dough with vegetable oil. Place the product on a greased baking sheet and leave to proof for 30-40 minutes.
