  • Cottage cheese – 300 g;
  • Vanillin – 1 package.

We pass the cottage cheese through an electric meat grinder or a sieve. Place in a food processor bowl and beat with two eggs. When the mass is thick enough, add softened margarine, cut into slices, and continue kneading.

Add dry ingredients. The result is soft and elastic dough. Wrap it in film and immerse it in the cold for half an hour.

Make eggnog from the remaining eggs and sugar and mix with cottage cheese. Chop the nuts with a rolling pin and combine both mixtures. Roll out the frozen dough into a square layer, scoop the nut-curd mass on top with a spoon and roll it into a roll.

Using a fillet knife, cut small cookies diagonally. If desired, you can brush the top with egg white and sprinkle with sugar or cinnamon. We transfer them at a distance between them onto a baking sheet coated with oil and load them into the electric oven for half an hour.

Kefir cookies: a simple no-frills recipe

There is little kefir left in the refrigerator; it can be processed into baked goods. Cookies made with fermented milk products are soft and can be stored for a long time without becoming stale.

Components:

  • Flour – 450 g;
  • Soda – 1 tsp;
  • Baking powder – 0.5 tsp;
  • Sugar – 250 g;
  • Raisins – 100 g;
  • Eggs – 2 pcs.;
  • Cinnamon – 1 packet.

Pour warm kefir into a plastic bowl, add baking soda, stir and leave to stand. Combine all the dry ingredients in a separate glass bowl: crushed flour, baking powder, cinnamon. Mix well.

Pour warm water over the raisins and let them swell. Drain the water and lay it out to dry.

When bubbles appear in the kefir mixture, break the eggs and mix. Add the dry ingredients in small doses and stir from underneath to prevent lumps from forming.

When the consistency becomes thick enough, dump the dough onto a flat surface and knead. We activate the oven at 180 °C.

We form the dough into a long thick sausage, pinch off a piece or cut it with a knife, splash it with the palm of your hand, making the dough look like a pancake, and place it on a sheet covered with tracing paper. Bake until golden brown.

The cookies are ready.

  • Flour – 650 g;
  • Mayonnaise – 200 ml;
  • Sugar – 250 g;
  • Eggs – 4 pcs.;
  • Spread – 150 g;
  • Soda – 1 tsp;
  • Vinegar – 1 tbsp. l.;
  • Powdered sugar - for decoration.

In a deep iron bowl, use a fork to mix soft spread or margarine with mayonnaise. Add eggs and sugar, soda and vinegar, and chopped flour in portions. Its dosage may vary. You need to look at the structure of the dough so that it turns out tight and cool.

We do not divide it into several parts. We install a meat grinder with a knife and a mesh for regular minced meat. Place some of the dough into the funnel and twist the “worms” out of the dough onto your palm. Cut with a knife.

Place the dough on a baking sheet lined with tracing paper. We make all the dough using this principle. Preheat the oven to 190°C and bake for 40 minutes.

Remove, let cool and sprinkle with powdered sugar. It is better to immediately remove the cookies from the parchment while they are hot, otherwise it will be much more difficult to do this later.

  1. It is better to re-sow the flour for baking homemade cookies several times. If you don't have a sieve, you can simply pour it from bowl to bowl - that will be enough. It will become airier and the dough will be easier to knead;
  2. During cooking, strictly follow the proportions, use scales and measuring cups. “By eye” – it won’t work;
  3. You need to bake on a baking sheet with low sides;
  4. Do not keep the cookies in the oven for longer than the specified time; overdry them and they will become very hard, like a cracker.

The shelf life of homemade cookies will increase if they are kept in an iron container or box with a lid. We wish you “culinary” victories!
