The longest part of preparing this amazing dish is waiting until it hardens. It is prepared and eaten instantly.

Ingredients

500 gr. cottage cheese

A glass of milk

200 gr. sour cream

A glass of sugar, less if possible

25 gr. gelatin

500 gr. any berries or soft fruits - grapes, strawberries, kiwis, apricots, raspberries, one type or assorted

Cooking method

Pour gelatin over milk.

Grind cottage cheese, sugar and sour cream with a spoon, mixer or blender.

Wash and cut the fruits into pieces, wash the berries.

After half an hour of soaking, heat the gelatin without letting it boil.

Add the milk-gelatin mixture to the curd mixture, add berries and fruits.

We put it in a mold - a silicone one will do, any kind for baking or just a deep dish. The silicone one can be used like this, and the rest can be covered with film.

Place in the refrigerator for half an hour to an hour until set.

Turn out onto a flat plate and cut into pieces.

Advice: You can use the microwave to melt the gelatin. This way it won't burn. It’s just advisable not to set it for a long time, but to check the condition at short intervals.   2. Using any miracle of kitchen equipment, beat cottage cheese with flour, cream, sugar. Continuing to beat, add eggs one at a time until fluffy.
    Remove the pan from the freezer, pour in half the filling, lay out the pitted cherries (let them drain first). You can simply “drown” the cherry by pouring out all the filling at once.
  3. Bake in an oven preheated to 170-180°C for about an hour (in my oven). We determine readiness this way: if the filling does not ripple around the edges, but the middle still “quivers,” then the cheesecake is ready. Let it cool in the mold, cool it in the refrigerator for at least 6 hours (if you can stand it that long, of course).

  3. Line a round pan with parchment, place the dough and spread it with your hands, forming high (6–7 cm) sides. Place in the refrigerator for half an hour.
  4. Grind the cottage cheese through a sieve, add sugar, including vanilla, sour cream, dry starch, eggs and lemon juice. Beat until creamy.
  5. Place it in the mold, place the peach halves on top, slightly pressing them into the curd cream.
  6. Preheat the oven to 180°C and bake the pie for about 1 hour.
  7. Cool, refrigerate for a couple of hours (or overnight).

Pie with cottage cheese in a slow cooker - step-by-step recipe with photos

Making an original cottage cheese pie in a slow cooker is not difficult. The main thing is to stock up on products:

  • 400 g cottage cheese;
  • 2 multi-cups sugar;
  • 2 eggs;
  • 2 multi-cups high-quality flour;
  • 2 tbsp. raw semolina;
  • a little vanilla for aroma;
  • 2 apples or a large handful of berries;
  • 100 g sour cream;
  • 120 g margarine or butter.

Preparation:

  1. To make the dough, rub the softened butter, 1 multi-cup sugar and all the flour into crumbs with a fork and then with your hands.

2. For the filling, beat the eggs into a bowl, add sour cream, semolina, cottage cheese, the rest of the sugar and vanilla.

3. Add grated apples or berries, or any other fruit you wish. Stir vigorously until smooth.

4. Pour half of the crumbs into the bottom of the multicooker bowl.

5. Spread the filling on top.

6. The rest of the dough is on top of it.

7. Set the “baking” mode for about 80 minutes (depending on the brand of equipment).

8. Carefully remove the finished pie from the bowl, and when completely cool, serve.

It is very simple to prepare baked goods with cottage cheese from shortcrust pastry. It won’t take much time, and the dessert will be an excellent addition to tea. Take:

  • 200 g flour;
  • 100 g butter;
  • half a glass of granulated sugar;
  • a raw egg;
  • 1 tsp regular baking powder.

For the filling:

  • 400 g cottage cheese;
  • 200 g low-fat sour cream;
  • a couple of eggs;
  • ½ tbsp. Sahara;
  • 2 tbsp. starch;
  • vanilla and lemon zest to taste.

Preparation:

  2. Add all the ingredients specified in the recipe for the filling to fairly smooth, strictly non-grainy cottage cheese. Beat the mixture with a blender or mixer for about 3-4 minutes.
  3. Spread the dough with your hands over the pan, not forgetting the edges. Place the creamy mass into the resulting basket.
  4. Bake the pie for about 40–45 minutes in an oven preheated to 180°C.
  5. Despite the relative liquid of the curd mass, it will “set” in the oven, and after complete cooling it will become dense. Therefore, put the sufficiently cooled pie in the refrigerator for a couple of hours.

A light and tasty dessert that children and adults will definitely enjoy. You can eat a piece of apple-curd pie even while on a diet.

  • 1 tbsp. flour;
  • egg;
  • 2 tbsp. cold milk;
  • 100 g butter;
  • 50 g sugar.

For the filling:

  • 500 g smooth cottage cheese;
  • 3 large apples;
  • 100 g fine sugar;
  • 100 g sour cream;
  • 3 eggs;
  • 2 tbsp. fresh lemon juice;
  • 40 g starch.

Preparation:

  1. Mash the egg and sugar with a fork, add soft butter, milk and flour. Quickly knead the dough with a fork and then with your hands. Make a ball out of it and, wrap it in plastic, put it in the freezer for 15 minutes.
  2. If necessary, peel and core the apples. Cut into even slices. Grind the cottage cheese in a meat grinder.
  3. Carefully separate the yolks from the whites and place the latter in the freezer for a couple of minutes. Beat the yolks, sour cream, starch and sugar with a mixer and add to the cottage cheese. Stir.
  4. Add 1 tsp to chilled whites. ice water and beat until strong white foam. In order not to lose the fluffiness, literally stir it into the curd mass one spoon at a time.
  5. Roll out the dough into a round layer (1–1.5 cm thick), place it in a mold, making low sides, and place in the oven for 15 minutes (200°C). Take out the mold, reduce the heat to 180°C.
  6. Place some of the apple slices beautifully on the bottom of the slightly cooled basket, pour in the filling and decorate the top at your discretion with the remaining apples.
  7. Bake at reduced temperature for about 35–40 minutes.

Pie with cottage cheese and cherries

You can make a pie according to this recipe even in winter if you have a bag of frozen cherries in the freezer. Prepare:

  • 250 g of first-grade flour;
  • fresh egg;
  • 50 g sugar;
  • 150 g softened butter;
  • 0.5 tsp soda

For the filling:

  • 600 g fine-grained cottage cheese;
  • 4 eggs;
  • 150 g granulated sugar;
  • 3 tbsp. starch;
  • 400 g fresh or frozen cherries.

Preparation:

  1. Grind the butter vigorously with sugar. Add the egg. Mix soda with flour and gradually add it into the dough. It should turn out moderately elastic and smooth.
  2. Grease the pan with oil and place the dough in an even layer with sides.
  3. Separate the egg whites and yolks from each other and place in different containers. Grind the latter with sugar to a whitish foam.
  4. If necessary, rub the cottage cheese through a sieve, add vanilla, starch and yolk mixture. Beat until smooth with a fork or mixer, whichever is more convenient.
  5. Add a pinch of salt or a teaspoon of cold water to the whites, beat until a strong foam forms.
  6. Very carefully fold the whipped whites into the curd mixture. Place it in a pastry basket.
  7. Thaw frozen cherries and drain the resulting juice. Squeeze out the seeds from the fresh one. Spread the curd cream over the surface. Sprinkle with a couple of spoons of sugar.
  8. Bake in an oven preheated to 180°C for about an hour.
  9. Cool the finished dessert thoroughly and place it in the refrigerator for several hours to soak.

Grated pie with cottage cheese in the oven

A pie prepared according to the following recipe turns out very airy and light, and is no more difficult to prepare than any other. The product can easily replace a birthday cake.

  • 100 g of good margarine;
  • 1 tbsp. Sahara;
  • 2.5 tbsp. flour;
  • ½ tbsp. low-fat sour cream;
  • 2 tsp factory baking powder.

For the filling:

  • 400 g smooth cottage cheese;
  • ½ tbsp. Sahara;
  • the same amount of sour cream;
  • 1 tbsp. l. raw semolina;
  • 3 eggs;
  • 1 tbsp. kefir;
  • a little lemon zest;
  • 4–6 medium apples;
  • generous handful of cinnamon.

Preparation:

  1. Grind sugar and soft margarine. Add sour cream, egg and baking powder. Stirring constantly, add flour. Form the elastic dough into a ball and, wrapped in film, refrigerate.
  2. If the curd is not smooth enough, grind it through a sieve. Add all ingredients specified in the recipe, excluding cinnamon and apples. Stir until smooth.
  3. Divide the dough into two unequal pieces. Line a mold with parchment paper and grate the larger one into an even layer.
  4. Arrange some of the pre-cut apples and sprinkle with cinnamon. Top with the whole curd mass, then apples and cinnamon again. In the last step, rub the rest of the dough over everything.
  5. Bake at 180°C for approximately 45 minutes. Cool completely before serving.

Layer pie with cottage cheese

Making this pie is twice as fast, since you use ready-made store-bought dough. The main thing is to take it out of the freezer about half an hour before cooking.

  • 700 g puff pastry;
  • 3 eggs;
  • 700 g fine-grained cottage cheese;
  • 0.5 tbsp. Sahara;
  • 50 g butter;
  • vanilla taste.

Preparation:

  1. Quickly beat two eggs with melted butter, sugar and vanilla. Add cottage cheese and stir with a fork until smooth. If desired, add a handful of raisins, candied fruits or crushed nuts.
  2. Roll out the defrosted dough thinly enough. Using a sharp knife, cut lengthwise into three pieces. Place the curd filling in an even path on each strip. Pinch the lengthwise edges to create a long sausage.
  3. Place all three sausages in a circle in the pan. Brush the surface with an egg beaten with a little sugar. Bake for about 40 minutes at standard temperature (180°C).

Yeast curd pie

Even a novice housewife can prepare a pie with cottage cheese with yeast according to this recipe. The baked goods will definitely turn out fluffy and tasty. Take:

  • 600 g flour;
  • 250 g milk;
  • 150 g butter for the dough and another 80 g for sprinkling;
  • 1 pack of dry or 20 g of fresh yeast;
  • 1 egg;
  • 250 g low-fat cottage cheese;
  • 75 g of sugar for the dough and another 175 for sprinkling;
  • vanillin.

Preparation:

  1. Sift the flour, add yeast (if it is fresh, finely chop it), pour in warm milk, melted butter, as well as an egg, the required portion of sugar and cottage cheese. Knead the soft dough. When it begins to pull away from the walls, form into a ball, cover with a towel and let rise for an hour.
  2. Line a large baking sheet with parchment, spread the dough in a thick layer, and make shallow holes on top with your fingers. Cover and let rise for another 20 minutes.
  3. Grate the well-frozen butter on a large grater over the dough, sprinkle with sugar and bake in an oven preheated to 200°C for about an hour or a little more.

Quick pie with cottage cheese

Sometimes you literally have to cook in a hurry, but this does not at all affect the taste and appearance of the finished baked goods.

  • 500 g cottage cheese;
  • 1 tbsp. granulated sugar;
  • 8 eggs;
  • ¾ tbsp. flour;
  • ½ tsp. soda quenched with lemon juice;
  • vanilla optional.

Preparation:

  1. Beat the egg yolks into the cottage cheese, add sugar and grind until smooth. Enter the quenched soda and vanillin.
  2. Using a mixer, beat the egg whites until stiff, and fold them into the main mixture, spoonfuls at a time.
  3. Sift the flour and very carefully add it to the curd dough. After stirring lightly, it should have a pancake-like consistency. Add a little more flour if necessary.
  4. Grease a mold with high sides with oil, dust with flour and pour in the curd dough. Bake until browned at an average temperature of 150–170°C.
  5. As soon as the cake begins to pull away from the sides of the pan, remove it and cool thoroughly.

To make a simple pie you need good, not very sour cottage cheese and a little patience. The finished product, due to the presence of layers, resembles a birthday cake.

  • 250 g flour;
  • 2 eggs;
  • 2 tbsp. Sahara;
  • 1 tsp soda;
  • 150 g butter margarine;

For filling:

  • 400 g cottage cheese;
  • 50 g butter;
  • 1 egg;
  • ½ tbsp. Sahara.

Preparation:

  1. Melt the margarine, beat in 2 eggs, add sugar and slaked soda, mix. Add flour and knead into a smooth, not very stiff dough.
  2. Divide it into 4-5 equal parts, roll each into a layer according to the desired shape. Let the cakes rest a little while you start filling.
  3. Stir cottage cheese with melted margarine and sugar, add egg. If the filling is liquid, “thicken” it with raw semolina. If desired, you can flavor it with vanilla, lemon zest, or essence.
  4. Cover the pan with parchment, place the first cake layer, a layer of filling on it, etc. (there should be dough on top).
  5. Bake at standard (180°C) temperature for 45–60 minutes.
  6. Cover the finished pie with a slightly damp towel and leave to cool, this will make it soft.

Royal pie with cottage cheese

This cottage cheese pie is often called Royal Cheesecake. It is enough to cook it only once to understand why the dessert received such a noble name.

  • 200 g high-grade flour;
  • 100 g soft butter;
  • 2 fresh eggs;
  • 200 g sugar;
  • 250 g cottage cheese;
  • 1 tsp baking powder;
  • 200 g of any berries or fruits.

Preparation:

  1. Grind butter, sugar and flour into crumbs.
  2. Separately, beat the eggs and sugar, add the mixture to the cottage cheese and knead. If the mass is not moist enough, add a little sour cream.
  3. In an even layer, place half of the crumbs, all the filling, pieces of fruit or berries, and more crumbs into a greased pan. Press the cake lightly over the entire surface.
  4. Place in the oven (180°C) for 30–40 minutes. Let the finished cake cool well and only then remove it from the pan.

Open curd pie

An original cottage cheese pie with sponge cake and airy filling can easily replace a birthday cake. It is just as beautiful and delicious.

For the biscuit:

  • 120 g first-grade flour;
  • 4 eggs;
  • 120 g fine sugar;
  • vanilla;
  • a packet of baking powder.

For filling:

  • 500 g smooth cottage cheese;
  • 400 ml cream;
  • 150 g sugar;
  • 24 g gelatin;
  • 250 g of any canned fruit.

Preparation:

  1. For the sponge cake, beat sugar with eggs, add flour with vanilla and baking powder. Stir and bake for 20 minutes in the oven at 180°C. Cool completely.
  2. Dilute gelatin in 50 g of warm water, let it swell for 15 minutes and pour into ½ tbsp. juice drained from canned food. Heat over low heat until the gelatin is completely dissolved.
