3. Pour cherries into boiling syrup. It will almost immediately decrease significantly in size. All berries must be carefully dipped in syrup. Let simmer for 5 minutes. and remove from heat.

4. The cherries should stand in the syrup for 8–10 hours. During this time, sugar will gradually penetrate into the pulp of the fruit, replacing the secreted juice. To protect the syrup from settling dust, you need to cover the container with gauze or baking paper, securing it around the edges with tape or clothespins.

Boil the cherries again for 5 minutes a second time. and refrigerate for 10 hours. After the third boiling, there will be practically no syrup left in the basin, and the cherries will shrivel and become very small.

5. While still hot, they should be transferred to a metal colander with a tray, allowing the liquid to drain. All remaining syrup can be boiled again and poured into sterilized jars and rolled up. In the future, it can be used to prepare various drinks or soak cakes. Carefully place the cherries on a tray lined with parchment or tracing paper.

6. The fruits must be kept in direct sunlight for 3-4 days, turning them over periodically. When candied fruits stop sticking to your hands, they should be rolled in granulated sugar or powder. Then pour into a colander and shake to remove excess sugar.

How to make candied cherries at home

Are you ready to make candied cherries? Be prepared for the duration of this procedure, but in the end you will end up with a large pile of delicious and aromatic candied cherries!
Rinse the cherries under cold running water and place them in a colander to drain the water from the fruit.


We process the fruits by removing the pit from each cherry. This is not difficult to do using a pitting machine. Next, place the seedless fruits in an enamel basin and fill with filtered hot sugar syrup (brought to a boil), which is prepared at the rate of 200 ml per 1 kg of fruit. water and 1.2 kg of granulated sugar. We soak the drenched cherry fruits for about 5-6 hours, after which we boil them over low heat for about 15-20 minutes, and again we keep them in syrup, putting the basin aside for 5-6 hours. Let's repeat the second time (boil for 10-15 minutes and set aside from heat). During the third cooking, boil the fruits until tender (another 15-20 minutes). In this case, the boiling point of the syrup should be about 108 degrees (bring to strong bubbles when boiling).


We discard the boiled mass (cherries) into a colander placed on a saucepan. Set aside for 1.5-2 hours so that all the syrup drains.

Roll each cooled cherry fruit in granulated sugar.


Place the cherries on a baking sheet in one layer and dry it in the oven at 40-50 degrees. If you don't have a low-temperature electric oven, simply place the fruits on a baking sheet in a single layer and place it in the sun. Thanks to the sun, candied fruits can also dry out perfectly. Quick candied cherries

Cherry - 1 kg.

Granulated sugar - 1 kg/200 gr.

Water - 200 ml.

Get rid of cherry pits. Place the berries in a container in which it is convenient to cook jam.

Boil the syrup, pour it over the cherries and leave for 6 hours.

Turn on low heat and simmer for about 15 minutes. Let the berries cool, but at least 5 hours.

After this time, the berries are put back on the fire and cooked until tender, then drained in a colander. The syrup should drain completely, this will take up to 2 hours.

When the syrup has drained and the berries have cooled, they need to be rolled in powdered sugar or fine sugar.

Spread the berries on parchment or a fine wire rack in one layer and dry for 5 or 6 days at room temperature. To speed up the process, it is possible to dry the candied fruits in the oven, setting the temperature to 40°C for 12 hours.

Ready candied fruits can be stored for a long time in a clean glass container.
