You can make such light, low-calorie pancakes from those products that are likely to be found in the refrigerator of every housewife. So, you will need:

  • 400 milliliters of water;
  • 1 tablespoon sugar
  • 200 grams of flour;
  • 50 milliliters of vegetable oil;
  • half a teaspoon of baking soda;
  • vanilla (vanilla sugar) - 1 sachet.

Pour the cooked pancake with strawberry sauce. You can, of course, use a ready-made store, but homemade, made from fresh strawberries, is more fragrant and healthy. For him you will need:

  • 20 grams of butter;
  • 300 grams of strawberries (you can use frozen or fresh);
  • 100 milliliters of water;
  • 3 tablespoons of sugar.

Preparation

Before making pancakes without eggs or milk, knead the dough:

  1. You can use regular water for pancakes, as well as mineral water. Soda will make the dough more fluffy, and during the frying process, small holes form on each pancake. So, let's warm up the water a little, to a maximum of 35 degrees.
  2. Now add sugar, vanilla and soda to the water and mix well. To shorten the cooking time, you can beat the batter with a mixer, immersion blender and other devices.
  3. Add oil. It is permissible to use absolutely any odorless vegetable - olive, sunflower. Knead water and oil until smooth.
  4. As usual, the flour should be sieved before adding it to the liquid. This will allow you to remove unnecessary impurities, debris, and saturate the dough with air for greater airiness. Add flour in small portions, knead for about 5 minutes until the mass becomes homogeneous.

Let's start frying lean pancakes:

  1. Prepare the pan - it is better to take a small diameter, with low sides and a not very thick bottom.
  2. Cover the pan with oil or other fat in a very thin layer and heat for at least 5 minutes over medium heat. The surface should be evenly hot.
  3. Pour a small amount of dough into the pan, distribute it by rotating the pan in a circle.
  4. Fry each pancake for 1 minute on each side until golden brown. Another sign of doneness is crispy around the edges.
  5. If you roll the pancakes in the future, it is better to let them pause a little - warm they take any shape and do not break.
  6. In our case, we will grease each pancake with a piece of butter, fold it 4 times with a "corner" and put it on a dish.

Now let's start making strawberry sauce for pancakes in water without eggs:

  1. Rinse fresh strawberries, dry them slightly on a towel. If using frozen strawberries, let them thaw at room temperature, drain the excess juice into a separate container (do not empty). Use a blender to puree the strawberries.
  2. Pour the mashed potatoes thus obtained into a saucepan with a thick bottom, add a piece of butter and a portion of sugar.
  3. Stir starch (both potato and corn starch can be used) in cold water so that it completely dissolves in it without lumps.
  4. Bring the sugar and strawberry puree to a boil, stirring occasionally, reduce heat to low.
  5. Pour the diluted starch here in a thin stream, continue to knead.
  6. Boil for no more than 2 minutes until the sauce thickens.
  7. Such a sauce can be prepared from absolutely any berries and even fruits. If desired, during the boiling process, you can add lemon or orange zest for piquancy, spices (cinnamon, ginger) and other flavors. Successful flavor combinations are obtained by mixing berries such as raspberries and currants.

Pancakes are laid out in a single layer and generously poured with still warm strawberry sauce. In addition, place a fresh strawberry and a couple of mint leaves on each. Since there is little sugar in the dough, the pancake can be sprinkled with powdered sugar on top through a strainer. The sauce is kept for a week in the refrigerator in a sealed jar.
