This fluffy charlotte recipe is probably the easiest and fastest way to make a delicious apple pie you can think of.

When I made charlotte for the first time in my life (about ... twenty years ago :-)), I did exactly this - I beat all the ingredients for the dough with a mixer, put the apples on the bottom of the frying pan and poured the dough over it. And since then I have never seen the need to somehow change this recipe. The only thing is that I always experiment with fillings - I add berries to apples, then cinnamon, then I replace them with pears, then I add bananas or oranges, or even delicious - with nuts.

But the basis is still the same - you always get a wonderfully tasty charlotte apple pie, which does not require special skills and does not take much time.

But still, we’ll write out the recipe step by step, providing detailed photographs of the entire process in order to give novice cooks the proper confidence in their actions!

Ingredients:

  • 2-3 apples,
  • 4 eggs,
  • 200 gr. Sahara,
  • 200 gr. flour.
1 Wash the apples, dry them and cut them into medium-sized cubes. Some people peel the skins, others like to cut apples into slices so that they look beautiful in the finished pie. But now we will do everything very quickly and very simply - as in the picture.
Break 2 4 eggs into a bowl, where we will knead the dough. The yolks and whites in this recipe are not separated from each other - we add everything as it is.

3 Pour all the sugar - 200 g - into a bowl with eggs.

4 We begin to beat the eggs with sugar with a mixer or a whisk, gradually adding flour in small portions.

5 Line a baking tray with high sides (or a frying pan) with baking paper and pour in the dough.

6 Pour the entire portion of chopped apples on top, trying to distribute them evenly over the entire area of ​​​​the future charlotte.

7 Put our charlotte to bake - in an oven preheated to 200 degrees, for about 30 minutes. But - look into the oven after 20-25 minutes, maybe your oven will cope with baking faster! I usually pierce the center of the pie with a dry wooden toothpick or a match - if it remains dry, the pie is baked.

This type of charlotte is slightly different from the classic version; we add kefir to the dough of this apple pie. This pie will take longer to bake - about 40-50 minutes.

Ingredients:

  • 1 glass of kefir
  • 4 eggs,
  • 1 cup of sugar,
  • 1.5-2 cups flour
  • 50 gr. melted butter
  • 0.5 tsp soda
  • A few drops of lemon juice (to apples)
  • vanillin (sachet)
  • 3 large apples

The process of preparing charlotte with kefir:

1 Chop the apples beautifully on a special grater, or cut them with a knife into thin slices, the entire width of the apple. Stir in a little lemon juice. 2 Drive all the eggs into a separate bowl and beat until foamy. Gradually add sugar to the eggs, achieving a well-beaten, homogeneous mixture that will noticeably increase in volume. 3 Pour in kefir and melted butter. Mix. Add flour in several additions and mix thoroughly again. At the end, add soda and vanillin and mix again. The dough is ready. 4 We place the apples differently in this recipe - in the middle, between the layers of dough. Line the baking dish with special baking paper and pour out half the amount of dough. Then we lay out all the apples and again the dough on top, the rest.

5 Bake for 40-45 minutes at a temperature of 180-190 degrees. You can sprinkle powdered sugar on top.

“Grandma’s” family recipe for delicious charlotte.


Let me make a reservation right away: my grandmother is not mine, and the recipe for this charlotte is not from our family heritage. But what, by and large, is the difference! The main value of such family recipes, their durability, is based on a tasty, successful, favorite dish in the family.

It is unlikely that a bad recipe will be passed from grandmother to mother, from mother to daughter, etc.! So let’s trust our family experience and start preparing a delicious charlotte with apples “according to grandma’s recipe.”

The preparation is a little more complicated than the usual “classic” quick charlotte, but we need to raise the bar! Let's try to prepare this culinary mini-masterpiece in our own kitchen and amaze our family with the stunning appearance and delicate taste of this original apple pie.

We will need the following products:

Dough:

  • flour 3 tbsp.
  • butter 170 gr.
  • yolks 3 pcs
  • sugar 2/3 tbsp.
  • salt a pinch
  • vanilla sugar 0.5 tsp.
  • baking powder for dough 1 tsp.

Filling:

  • apples 3-4 pcs
  • Cream: 3 egg whites + 1/2 tbsp sugar + 1 tsp lemon juice.

Cooking process step by step:

1 First of all, separate the whites from the yolks. Add an incomplete glass of sugar to the yolks (about 2/3 of the volume of 250 ml) and mix well with a mixer. 2 Add melted butter to this mixture and beat as well. Then add vanillin, a pinch of salt and mix again. Then add 2.5 cups of sifted flour. It is advisable to add flour in 2-3 additions, mixing with each new portion of flour. 3 The dough turns out to be quite sticky, but we place it on a floured surface (it’s good to use a special silicone mat for this) and continue kneading with our hands, adding a little of the remaining half a glass of flour as needed (so as not to stick to our hands and to the table surface). We achieve a soft, elastic dough structure. Separate approximately 1/3 of the resulting piece of dough, wrap in film and place in the freezer for 30 minutes. 4 We will form the remaining dough into the bottom layer of our pie. Line a baking pan (d=24 cm) with parchment and place the dough on it, forming sides 2-3 cm high.
5 Let's start with the filling. Pour half the volume of sugar and a few drops of lemon juice into the whites and beat with a mixer or whisk until white foam. Then add the remaining sugar and beat until thick foam. Almost like meringue, but it can be made into a more liquid state - we won’t need to form separate meringue cookies, we’ll put the whole mass on the pie in one layer. 6 Take sweet and sour apples. You can peel them, but I personally like to cook charlotte with unpeeled apples, especially since in this recipe we will not cut them into large cubes (as in classic apple charlotte), but grate them on a coarse grater. Immediately place the pureed apples on the prepared dough - before they darken. We level and compact. 7 Place the next layer of whipped whites on top of the apples. Distribute evenly over the surface with a spatula. Now we take the frozen dough out of the freezer and grate it on a coarse grater directly onto the pie, as the top layer. 8 Place in a hot oven for 40 minutes at 170°C. Our task is to ensure that the pie is well baked, because it turns out to be quite tall, this must be taken into account when choosing a mold - take either a larger diameter or one with high sides, it is very convenient to use a mold with removable sides, it is easy to then get our tender apple charlotte onto a dish.

The result is a great combination of crumbly base, crispy crust and delicate cream with the sweet and sour taste of apples - a very tasty version of apple charlotte according to “grandmother’s” recipe.

Charlotte in a slow cooker according to this recipe can turn out so lush and beautiful -

Baking in a slow cooker differs in appearance and taste from similar baking in the oven. There are no crispy crusts here and the apples look paler. It also tastes different - more tender, a little different, more airy consistency - but also very tasty. The dough rises beautifully, but if you are not happy with the slight “paleness” of our charlotte, you can sprinkle it with cinnamon, powdered sugar, or a mixture of these two sprinkles.

For the test we will need:

  • 1-1.5 tbsp. flour (depending on the size of the eggs and the quality of the flour)
  • 4 eggs
  • 1 cup of sugar (you can use less if you don’t like too much sweetness)
  • 2-3 apples
  • butter for greasing the pan

Let's start cooking charlotte in a slow cooker:

1 Separate the whites from the yolks. Add a pinch of salt to the whites and begin to beat until a good dense foam. When the foam has already formed, add sugar and continue whisking - the foam will become even thicker and denser. 2 Add the yolks to the protein mixture and beat again. Now we remove the mixer - we will add the sifted flour, but we will not knead with a mixer, but carefully - with a spatula or spoon. Just like classic biscuit dough is usually made. With this method of kneading flour, the dough will retain its fluffiness and airiness during baking (as you noticed, we do not use either soda or baking powder to make the dough fluffy). 3 Grease the multicooker pan with butter to make the cake come away from the walls more easily, and place the dough into the bowl. On top of the dough, place our apples, cut into pieces or slices. 4 Set the mode to “Baking” and time to 45 minutes. Leave the valve open. That’s it, you can go mind your own business 🙂 5 After 45 minutes, we take out our “culinary masterpiece” from the multicooker - a fluffy and soft, very tasty charlotte with apples!

Another option for delicious and beautiful charlotte in the oven is Charlotte with orange zest. I tried this recipe just the other day and really liked it. There is no shame in putting such a charlotte on the table for guests - it looks very beautiful, thanks to its splendor and neatly laid out apple slices. Try it, maybe this apple charlotte recipe will become your favorite.

INGREDIENTS (for an 18 cm pan):

  • large egg 4 pcs.
  • red apple (4 large or 12 small)
  • sugar 150 g.
  • flour 150 g.
  • vanilla sugar 1 pack. (10 years)
  • you can add half a spoon of cinnamon
  • zest of 1 orange
  • full fat sour cream 1 tbsp. with a slide

Let's prepare it like this:

1 First, peel the apples from the centers with seeds and anything unnecessary. But we don’t remove the skin - it will add additional color and taste to our apple slices. Cut the apples in half and then into slices about half a centimeter wide. 2 Eggs are best taken fresh and large. Beat them first with a pinch of salt, then add vanillin and sugar - continuing to beat. As soon as you get a thick, strong foam, turn off the mixer. Then we will stir everything with a spoon (or spatula) so that the dough retains air and our charlotte comes out fluffy and tall. 3 Grate the zest of one orange on a fine grater and add it to the charlotte dough. At the same time, add a heaping tablespoon of rich sour cream. By the way, I sometimes add mayonnaise to the dough instead of sour cream, oddly enough, it turns out very tasty! Add flour in several additions and mix everything thoroughly with a spatula. 4 Take a mold with a diameter of 18 cm. Grease it with oil, sometimes I also sprinkle it with semolina, but you don’t have to sprinkle it with anything. Place the bottom layer of apples, covering the bottom of the pan. Sprinkle a little granulated sugar. You can add cinnamon for more flavor. 5 Place all the dough on the first layer of apples. We lay out the main part of the apple slices on top, creating a beautiful pattern, as you can see in the photo. Place the apple slices, skin side up, in a spiral - from the edges to the middle. 6 This charlotte is baked for 30-35 minutes in a hot oven, brought to 190ºC.

The charlotte turns out to be very fluffy (and note - without any baking powder!), aromatic, thanks to vanilla, cinnamon, orange zest and apples, the dough is tender and not dry, thanks to sour cream, the crust is crispy and melts in your mouth. Not a pie, but a holiday :)

I must admit that I always considered a classic charlotte to be exactly the recipe that I baked 20 years ago and am still baking, which was prepared in my childhood by the mothers and grandmothers of my friends, which even now will be “reported to you by heart” by almost any housewife of all ages - “ 4 eggs, a glass of flour, a glass of sugar - beat everything, pour this mixture over the chopped apples and bake until done.” It’s probably easier to just fry some eggs, by God... :-)

But thanks to the fact that I was preparing material for this article, I learned that charlotte was originally an apple pie with... bread! Slightly shocked by this new information for me, I went to search and compare different recipes for “charlotte with bread”. It turned out that this recipe is called “French classic charlotte” and here I found two main directions, which I will now tell you about in more detail.

OPTION 1 classic French charlotte.

We will need:

  • apple 4 pieces
  • sugar 50 grams
  • butter 200 grams
  • toast bread 6 slices
  • cinnamon 5 grams
1 Peel the apples. Remove the core. Cut into pieces. Place in a saucepan. We put it on fire. Add sugar. Cover with a lid. 2 Then open the lid to allow the liquid from the apples to evaporate. Melt the butter in a saucepan. 3 Cut off the crusts of the bread. Trim the bread slices to the height of the sides of the pan. Dip the slices into melted butter. 4 Place the slices along the sides of the mold. Place a slice on the bottom of the mold. Cover the gaps with pieces of bread. 5 Add cinnamon to apples. Place the apples in the mold. Cover with a slice of bread. We close the holes with pieces of bread. 6 Place the charlotte in the oven at 190 degrees for 35-40 minutes. Then turn the pan over onto a plate. Carefully remove the form.


Important note for this recipe: Dip the bread pieces into the oil for just a split second, do not keep them in the oil for too long - it will turn out too greasy!

I would never have thought that you could bake such a delicious apple pie with bread and apples, without any dough, but judging by the reviews of this recipe, it turns out very tasty, many people liked this recipe. I’ll definitely try it, I just need to find a suitable form.

If you are afraid of “bread and butter”, look at the second version of the classic French charlotte, with bread, but of a slightly different plan.

2nd OPTION of charlotte with bread and apples.

We will need:

  • 1 loaf (preferably yesterday's)
  • 3 - 4 apples
  • 400 ml. milk
  • 3 eggs
  • 25 gr. butter
  • 6 tablespoons sugar
  • 1 - 0.5 teaspoon cinnamon or vanilla (optional)

This option differs in that we dip the pieces of dried bread not into pure butter, but into an egg-milk mixture whipped with sugar. But in general, the essence is the same as in the previous recipe - we lay out a frame of soaked pieces of bread, place apples inside (you can simply cut them into pieces, you can process them in a frying pan, as in the previous recipe), and cover the top with the same croutons.

You can also add any fruits to apples, you can add nuts, in a word, whatever your imagination tells you. Don't forget to add vanilla or cinnamon for flavor.

The bread in this recipe must be pre-dried; if you take fresh, it will not completely absorb the egg-milk mixture, so prepare yesterday’s or the day before yesterday’s bread or dry fresh in the oven.

You can lay out the bread not as a frame, placing apples inside, but in layers - place a layer of apple slices with soaked crackers. In this case, pour a little egg mixture into the bottom of the mold and pour on top. It turns out this kind of pie -
