We are on vacation in hot Ukraine, and there are simply no apricots here! Bright, aromatic apricots of various varieties fall from the tree at our feet, as if they were asking to be put on the table.

I didn’t pick up the broken fruits from the ground, but picked them with my own hands directly from the branch, carefully putting them in a clean bucket.

And after that, the baby and I got carried away in the kitchen, and a wonderful pie with apricots was born in a slow cooker. What my daughter liked most was serving me apricots when we removed the pits: she did it so quickly that I could barely keep up =)

So, to make a delicious, fluffy apricot pie, I took the following products:

  • 400 g
  • Sugar – 300 g
  • Eggs – 4 pcs.
  • Flour – 250-300 gr
  • Baking powder for dough – 1 tsp
  • Salt – 0.5 tsp/l
  • Butter - grease the multicooker bowl

The volume of my multicooker bowl is 4.5 liters.

Apricot pie in a slow cooker - preparation:

Apricots should be washed thoroughly, divided into slices and pits removed.

Beat eggs with sugar and salt. The more fluently you beat the eggs, the better.

Add sifted flour, baking powder and knead a thin dough, approximately the consistency of sour cream.

Grease the multicooker bowl with butter and sprinkle with a little sugar. We spread the apricots.

Pour out some of the dough.

Place another apricot layer on the dough. You can also cut the apricots smaller and add them directly to the dough.

Pour out the second part of the dough.

Cook the pie in the “Baking” mode for about 60 minutes. Check the readiness of the dough.

In order to remove the apricot pie from the multicooker without loss, you need to insert the steaming container and turn the multicooker bowl over.

The dough is kneaded using a mixer, and for baking you will need a multicooker with the “Baking” program. Before pouring the dough into it, the bowl must be greased with vegetable oil or butter. One hour is enough to bake the cake.

Pie with pieces of apricots can be served with tea, sprinkled with powdered sugar. This crust is also suitable for making a cake. It is enough to cut it in half and coat it with delicious cream, boiled condensed milk or confiture.

  • 1 glass of kefir (if possible, it is better to use kefir made from homemade milk);
  • 100 grams of butter;
  • 120 grams of granulated sugar;
  • 10-12 large fresh apricots (in principle, the amount of fruit in this pie is subjective: you need to focus on your taste preferences);
  • 0.5 teaspoon of soda (no need to extinguish it);
  • vanillin optional.

Beat the eggs with sugar, melt the butter and pour into the eggs, stir. Add kefir and beat the mixture with a blender until smooth, at the end add flour and soda and mix so that there are no lumps. Pour the dough into the multicooker bowl, place the apricots cut into slices on top, bake the pie until done. On average this takes one hour.

After baking, we also do not rush to remove the cake from the mold - let it cool in it. very tasty with hot cocoa and cappuccino, but also very good with freshly brewed tea.

From shortcrust pastry

Let's consider a simple recipe for shortbread pie with apricots in a slow cooker, which attracts with its taste. For preparation you will need:

  • 3 eggs;
  • flour - 250 grams;
  • granulated sugar - an incomplete glass;
  • butter - 150 grams;
  • fresh apricots - 10 large pieces;
  • 0.5 teaspoon of soda + a few drops of lemon juice;
  • vanillin is added according to desire and taste preferences.

Wash the apricots, dry them with a paper towel, divide them into two halves and remove the pits. Place the fruits prepared in this way on the bottom of a multicooker, greased with oil, cut side up.

In a separate bowl, beat the melted butter with vanilla and granulated sugar. Then, one by one, gradually add the eggs, mixing the mixture with a blender at low speed. Next, add flour and baking powder into the mixture, knead into a soft dough, being careful not to “clog” it with prolonged kneading. Pour the finished dough into the slow cooker over the apricots and level the top with a spoon.

Set the “baking” mode and the timer for 60 minutes, plus another 15 minutes for the “warming” mode. When the pie is baked, leave it in the slow cooker with the lid open for another 15 minutes, then remove and cut into portions.

Cheesecake

This recipe is also quite simple, despite the presence of cottage cheese. In a wide bowl, mix 100 grams of melted butter, one egg and 50 grams of sugar, beat lightly with a blender and add 0.5 teaspoon of baking powder and 200 grams of flour. Knead the dough and place it in a cold place for about forty minutes.

In the meantime, prepare the filling, for which you need to lightly beat the following ingredients with a blender until smooth:

  • 400 grams of fresh cottage cheese with a high percentage of fat content;
  • 200 grams of sour cream;
  • 110 grams of granulated sugar;
  • 40 grams of starch;
  • a little vanillin;
  • two or three eggs.

Line the multicooker bowl with dough in a half-centimeter layer and, lightly pressing the dough with your fingers, make small sides, place the filling on top, and place halves of fresh apricots on top. Bake in the slow cooker for 60 minutes and cut when cooled.

What is the difference between pies made from the oven and those baked in a slow cooker?

As with other fruits, it is also practically no different from pies from the oven, except that there is no fried golden crust - the edges of the pies from the multicooker are soft and tender. Otherwise, they are just as aromatic, airy and delicious.
